Few songs capture the bittersweet passage of time quite like "Martha."

Released on Tom Waits' 1973 debut album Closing Time, the song was never issued as a single and has zero Billboard chart history. Yet more than five decades later, it remains one of the singer-songwriter's most cherished compositions, introducing listeners to the storytelling style that would define his remarkable career.

Rather than focusing on a breakup itself, Waits imagines something far more poignant: a man placing a long-distance phone call to a woman he loved decades earlier.

"Operator, number please / It's been so many years," he begins before asking, "Will she remember my old voice while I fight the tears?"

The caller, Tom Frost, eventually reaches Martha and suggests they meet for coffee to reminisce about "those were days of roses, of poetry and prose." Even though both have long since married other people, he closes with a heartbreaking confession: "Martha, Martha, I love you, can't you see?"

Part of what makes "Martha" so extraordinary is that Waits was only 24 years old when he wrote it, yet he convincingly inhabited the perspective of a man looking back on a lost love after four decades.

In a retrospective appreciation of the song, The Guardian noted that Waits "drops comfortably into the slippers of a much, much older man," creating a narrator who calls an old flame to reflect on their shared past before quietly revealing that he is still in love with her. The publication also argued that the mystery surrounding why the couple drifted apart only deepens the song's emotional impact, leaving listeners to imagine what might have been.

Although Closing Time attracted positive reviews, it received little commercial attention when it was released, and neither the album nor "Martha" became chart hits in the United States. Over time, however, the record developed a devoted following and introduced songs that would become staples of Waits' catalog.

"Martha" also found new life through other artists. Tim Buckley recorded the first notable cover later in 1973, while Bette Midler later performed the song on Saturday Night Live.

More than 50 years after its release, "Martha" continues to resonate because its central idea is universal. Most people have wondered, at least once, what became of someone they loved years ago. Waits turned that fleeting thought into a four-and-a-half-minute conversation that still feels as intimate and heartbreaking today as it did in 1973.

Days after abruptly rescheduling several concert dates, country star Parker McCollum and his wife Hallie Ray Light McCollum welcomed their second child.

Fans, friends, and a few famous faces took to Instagram, gushing over Rocker.Brittany Mahomes commented, “Ahh congrats guys!” and country superstar Miranda Lambert wrote, “Congrats y'all.”

Last Wednesday, McCollum unexpectedly postponed his weekend shows, posting an explanation on Facebook: “Hey everyone, wanted to share some good news with you all. My beautiful wife is blessing our family with our second baby and it’s looking like he’ll be here tomorrow! I couldn’t be more excited to become a dad for the second time.” Of course, McCollum was right on target, and his baby boy was born the next day.

He continued his apology, adding, “Unfortunately, that means I’ve got to reschedule the rest of this weekend’s shows. Once I step off the stage at Red Rocks, I’m headed straight home to be with the family. Hate having to make that call, but family comes first.”

Even though the cancellation was a curveball, fans weren’t exactly shocked by the past week’s events. The musician and his then-pregnant wife announced their baby news on Christmas of 2025, writing on Instagram, “McCollum party of 4 next Christmas! Another boy joining us summer 2026!”

“Easy to Be Hard” was originally a song from the rock musical Hair, which debuted in 1967. The song was covered by Three Dog Night on their second album in 1969 and quickly climbed the charts. Their version of the song hit No. 4 on the Billboard Hot 100. It was also included on Billboard’s Hot 100 songs of the year, reaching No. 33.

In an interview with Chuck Negron, one of the founding members of the band, he explained how miserable the band made him over the years. “I never in my life went out and jammed, like guys do when they go out to clubs, and they jam, it's something that isn't attractive to me," he explained. "I don't need that. I mean, I don't WANT that. I want something that's arranged, put together well and presented in a very artistic light. So I was a different animal than them. I learned to perform by filling a role that fit me and the band. Now, when 'One' became the first million seller, and then 'Easy to Be Hard,' and then one-million-dollar seller after another featuring my voice, the dynamics changed.”

He continued, “We'd do Dick Clark or one of many, many TV shows, and I'd be the face you'd see. I'd be the one singing, so I'd be the one they'd talked to, and when we'd do the concerts, I was the person they knew. And I didn't know this until events started happening. I would notice Danny [Hutton] and Cory [Wells] were very upset, actually pissed off at me. And I eventually realized this was a very ego-oriented business. And people weren't only in it to be a success, to be able to work and to do what they were. They wanted to be stars and be noticed. So it became a very painful, hard place for me to be, because the bigger the band got with MY hits, the more dysfunctional the band became. It was a terrible place for me. It was miserable because I thought they were my friends.”

Three Dog Night had over 20 top 40 hits throughout their careers, including “Joy to the World,” “One,” and “Mama Told Me (Not to Come).” The group was inducted into the Vocal Group Hall of Fame in 2000. However, they disbanded in 1976. Negron stated that it was mostly due to drugs and “the businesspeople, the managers, who kept us on the road constantly.”

He told Forbes, “It wasn’t over fighting, like with many bands. We were close, but it was a competitive tension. You had three guys who were solo artists. I made my first record when I was 15. We did argue about songs, but we never really got into it until the drugs and then people getting frustrated because the work wasn’t getting done. Danny [Hutton] stopped showing up at the studio. I was still functioning. I gave Three Dog Night its first million-seller ['One'] and its last, in 1976, 'The Show Must Go On.' Danny and Joe Schermie eventually got fired, both because of drugs.”

Negron died this February. He was 83.

Fans heading out to see Modest Mouse this fall will notice a different face on stage. Modest Mouse has announced that guitarist Simon O'Connor will no longer join the band's upcoming tour after he was accused on social media of sending sexually explicit messages to a minor.

In a statement shared on Instagram, the band wrote: "Simon O'Connor will not be joining us on the upcoming tour. The good news is that Seth Jabour of Les Savy Fav will be jumping in to play guitar."

According to Rolling Stone, the accusations surfaced after a 17-year-old Reddit user alleged that O'Connor had sent them an explicit image and commented on photos of them that were taken when they were 16 years old.

O'Connor later responded to the allegations on Reddit, apologizing and saying he had made "a mistake." According to the publication, he claimed he believed he was communicating with an online troll who had previously contacted him using multiple social media accounts.

Despite O'Connor's explanation, Modest Mouse announced that he would not participate in the band's upcoming tour. The group has not said whether the decision is permanent, and a representative declined further comment beyond the band's public statement, according to Rolling Stone.

O'Connor joined Modest Mouse in 2021 and appeared on the band's recently released album An Eraser and a Maze. Filling in for the tour will be Seth Jabour, guitarist for the indie rock band Les Savy Fav.

The tour is scheduled to begin Aug. 4 in Ojai, California, and conclude Oct. 23 in Sacramento.

Saturday brought a mix of celebration and heartbreak for The Sopranos faithful.

Early in the day on Saturday, August 1, fans were thrilled to see Jamie-Lynn Sigler (who famously played Meadow Soprano on the HBO series) take the field at Citi Field to perform "The Star-Spangled Banner" ahead of the New York Mets' game against the Miami Marlins. 

But as the day unfolded, excitement gave way to sadness when news broke that Vincent Pastore, the actor behind Salvatore "Big Pussy" Bonpensiero, had died at the age of 80.

The timing wasn't lost on fans, many of whom pointed out the unexpected coincidence of one beloved Sopranos star taking center stage just as another's passing was announced.

“What are the odds she sings the nation anthem and then Vincent Pastore dies,” one fan noted in the comments of a video the MLB shared on Instagram.

“Crazy time. Rip big P,” said a third.

Sigler's performance earned praise of its own, with many fans applauding her powerful rendition of the national anthem. Others also noted the significance of the performance given the 45-year-old's ongoing battle with multiple sclerosis. 

“Awww go girl! MS made it hard for her to sing all these years, but she actually started in musical theater! This took courage and hard work!” one fan said.

Sigler, who publicly revealed her MS diagnosis in 2016, has been open over the years about the physical and emotional challenges of living with the disease, making her performance all the more meaningful.

Later in the day, Sigler joined her fellow castmates in mourning Pastore with a heartfelt tribute on Instagram. Sharing a photo of the actor smiling, she simply wrote, "Love you forever, Vin ❤️."

Pastore portrayed Big Pussy, one of Tony Soprano's closest friends, throughout the first two seasons of the acclaimed HBO drama before continuing to appear in flashbacks and dream sequences through the series finale. 

Tributes also poured in from co-stars including Edie Falco, Michael Imperioli, Lorraine Bracco, and Dominic Chianese.

Scott Hylands played Detective Kevin “OB” O’Brien in Night Heat, a police crime drama that aired on CBS from 1985 until 1989. He also played the role of Ennis Stussy in the television adaptation of Fargo, and Father Travis in V. Hylands died on July 29. He was 83.

“Husband, Father, Actor, Director, Writer, Storyteller, Friend, and lover of life,” his son Luke posted to Instagram earlier this week. “I am heartbroken to share the news that my Dad Scott has passed away Wednesday night. Myself and my family are still trying to process this horrible loss. There simply are not enough words I can say about you right now. You are my forever hero and my best friend. Always and forever. I love you. Goodbye Dad.”

Hylands, who was born in Canada in 1943, originally studied zoology before transferring to theater arts. He officially began his acting career in an off-Broadway production of Billy Liar.

According to his IMDb page, "His performance drew the attention of the noted director William Ball, who was just forming the American Conservatory Theatre (San Francisco). Scott became one of the original company members of the ACT, appearing in over twenty productions, Death of a Salesman to Beyond the Fringe, King Lear to Charley's Aunt. While his film test for the Antonioni film Zabriskie Point didn't get him the part, it led him to another film, Daddy's Gone A-Hunting, which introduced him.”

Hylands also appeared in many different TV shows and films over the years, including NYPD Blue, The X-Files, Supernatural, Stargate SG-1, Earthquake, Slipstream, Fools, Operation Snafu, Bittersweet Love, and The Boys in Company C.

Bewitched fans know Erin Murphy as the beloved child star who played Tabitha Stephens on the classic TV sitcom, but there’s a surprising coincidence she shares with her onscreen family decades later.

Both Erin and her TV mom Samantha (played by late star Elizabeth Montgomery) married men with the same first name—and it’s not an especially common one.

Speaking with The Guardian Liberty Voice, Murphy, now 62, once shared, “Well, my husband’s name is Darren, and my TV dad was Darrin.”

Steve Von Till of Neurosis is heading back on the road for a solo U.S. tour.

While continuing his legacy with the pioneering post-metal band, the guitarist and vocalist shared his plans for a nine-date tour.

In an Instagram update, the musician announced the cities and dates for the upcoming tour, all scheduled for this August.

Kicking things off on Aug. 19 in Spokane, Washington, he will make multiple stops in California and Arizona before touring through New Mexico, Colorado and Utah, with Salt Lake City serving as the final stop.

“A month from now STEVE VON TILL will be visiting a few western states to continue sharing the songs from his Alone in a World of Wounds album,” the caption reads.

Moreover, the musician revealed the touring band joining him on the upcoming trek.

For this project, he mentioned performing with his backing band from last year's tour, featuring Dave French on synths, bass and percussion, while Brent Arnold will perform on cello.

Not according to professional chefs—or modern food safety experts.

In fact, what many people think is making chicken safer may actually do the opposite. Rather than washing away harmful bacteria, rinsing raw chicken can spread it around your kitchen, sending tiny droplets of contaminated water onto your sink, countertops, faucet handles, nearby dishes and foods that won't be cooked before eating.

It's one of those pieces of kitchen advice that has changed over the years. Decades ago, many home cooks were taught to rinse poultry before cooking, so it's no surprise the practice has stuck around. Today, however, both chefs and food safety experts agree there's a better—and much safer—approach.

"Washing raw chicken is one of my biggest culinary bugbears," says Hazel McKinlay, a former head chef with more than 20 years of professional kitchen experience. During two decades in professional kitchens, rinsing raw chicken was never part of her routine, and she says it shouldn't be part of yours either.

The good news? Skipping the rinse doesn't just help keep your kitchen more sanitary; it can also help you cook better-tasting chicken. From achieving crispier skin to avoiding dry, overcooked meat, Chef McKinlay says a few simple changes before your chicken ever reaches the pan can make a noticeable difference. Read on to see her advice for your best chicken yet.

The One Thing to Stop: Rinsing Your Chicken in the Sink

If you've always rinsed raw chicken before cooking, you're certainly not alone. It's one of those kitchen habits that's been handed down through generations, often with the belief that it washes away bacteria or residue left behind during processing.

The problem is that it doesn't.

"I never rinsed raw chicken in a professional kitchen during 20 years as a chef, and I don't recommend doing it at home either," Chef McKinlay says. "Rinsing doesn't remove bacteria, but it can spread contaminated water around your sink, worktops and nearby utensils. Any bacteria present on the chicken will be destroyed by cooking the chicken to the correct internal temperature."

That's exactly why food safety experts have spent years trying to break the habit. When water hits raw chicken, tiny mist-like droplets can spray well beyond the sink, potentially contaminating surfaces you didn't notice were affected. Even if the chicken itself eventually cooks to a safe temperature, those stray droplets can create opportunities for cross-contamination.

Chef McKinlay says the guidance today is pretty straightforward. "Modern food safety guidance is clear that raw chicken shouldn't be washed before cooking," she says. "Instead, remove it from the packaging, pat it dry with kitchen paper if needed, season it and cook it."

It's one of those rare kitchen tips that's actually easier while also being more effective. By skipping an unnecessary step, you'll save time, reduce the chance of spreading bacteria around your kitchen and set yourself up for better results once the chicken starts cooking.

There's another reason professional chefs avoid rinsing chicken, and it has nothing to do with food safety. It's about flavor.

One of the biggest differences between restaurant-quality chicken and the version many people make at home comes down to browning. That deep golden color on roasted chicken skin or the beautifully caramelized crust on a pan-seared chicken breast doesn't happen by accident.

In a recent Instagram Reel, food creator Joseph Abell (@thejosephabell) explains that removing excess surface moisture helps kick-start the Maillard reaction—a series of chemical reactions that occurs when proteins and natural sugars are exposed to high heat. It's what gives seared chicken a deeply browned crust, savory aroma and complex flavor profile.

In order to produce a Maillard reaction, "surface moisture has to evaporate," Chef McKinlay explains. "If the skin or meat is wet, the heat is spent evaporating water instead of creating a golden crust, so the chicken steams before it sears. Dry chicken browns faster and develops much better flavor."

Think of it this way: If your chicken is still wet, your pan has to cook off that water before it can start browning the meat. During that time, you're essentially steaming the chicken instead of searing it. That's why chicken that's gone straight from the sink to the skillet often looks soft and pale instead of crisp and browned.

The Prep Method to Use Instead

Fortunately, replacing the rinsing habit is incredibly simple.

Rather than holding the chicken under running water, Chef McKinlay recommends removing it from the packaging and patting it thoroughly dry with paper towels. That removes excess surface moisture without sending potentially contaminated water splashing around your kitchen.

"Instead of rinsing chicken, remove it from the packaging and pat it dry thoroughly with kitchen paper," she says. "Dispose of the packaging immediately, wash your hands with soap and warm water, and clean any surfaces or utensils that have come into contact with the raw chicken. That approach is both safer and produces better results in the pan."

Professional kitchens know that dry surfaces are the key to crisp skin and better caramelization, which is why patting chicken dry has long been standard practice. It may seem like a small detail, but it's one that pays off every time you cook.

How To Get Crispy Chicken Skin

Once you've stopped rinsing your chicken and started drying it properly, you're already well on your way to crispier chicken skin. But Chef McKinlay says there are a few more tricks professional kitchens rely on.

"The secret to crispy chicken skin is removing as much surface moisture as possible before cooking," she says. "Pat the skin dry with kitchen paper, leave the chicken uncovered in the fridge for a few hours if you have time, then cook it in a hot oven or pan without overcrowding. If the pan is overcrowded, the chicken releases moisture and starts steaming instead of crisping."

Having the uncovered chicken rest in the refrigerator acts like a mini dry brine, allowing even more moisture to evaporate from the skin before it ever reaches the heat. Combined with a hot pan, oven or grill, and enough space between each piece of chicken, and the ideal conditions for a crisp, golden skin are created

It's also worth resisting the urge to fuss with the chicken once it's cooking. Constantly moving or flipping it too soon interrupts the browning process and can prevent the skin from crisping evenly.

Another Mistake to Avoid: Stop Overcooking It

If rinsing chicken is one of Chef McKinlay's biggest kitchen frustrations, overcooking it isn't far behind.

She says many home cooks accidentally dry out perfectly good chicken because they're so focused on making sure it's safe to eat. The irony is that cooking it longer than necessary doesn't make it safer—it just makes it less enjoyable.

"The biggest mistake I see is people cooking chicken until it's dry because they're worried it isn't safe," Chef McKinlay says. "A digital thermometer removes the guesswork. Once the thickest part reaches a safe internal temperature, take it off the heat and let it rest for a few minutes before serving."

A good instant-read thermometer is one of the easiest ways to improve your cooking confidence. Instead of cutting into the chicken to check whether it's done—or leaving it on the heat "just to be sure"—you'll know exactly when it's time to remove it from the pan or oven.

Giving the chicken a few minutes to rest afterward is just as important. Resting allows the juices to redistribute throughout the meat instead of running out onto the cutting board, leaving you with a juicier, more flavorful bite.

2 More Chef-Backed Tips

Small habits often make the biggest difference in the kitchen, and Chef McKinlay says there are a few more worth adopting if you want consistently better chicken.

• Take your chicken out in advance. One of the simplest ways to improve chicken is by taking the chicken out of the refrigerator about 20 to 30 minutes before cooking. Allowing it to lose some of its chill helps it cook more evenly, especially when preparing thicker cuts. She also recommends leaving the chicken alone once it's in the pan. "Bring the chicken out of the fridge 20–30 minutes before cooking so it starts closer to room temperature," she says. "Once it's in the pan, resist the urge to keep turning it. Letting the chicken cook undisturbed helps it brown evenly and release naturally from the pan."
• Say no to rinsing chicken with vinegar or lemon juice. If you've ever wondered whether rinsing chicken with vinegar or lemon juice is any safer than rinsing it with plain water, Chef McKinlay's answer is simple: "No. Neither vinegar nor lemon juice makes raw chicken safer to eat," she says. "They might add flavor if used as part of a marinade, but they don't replace proper cooking or food hygiene."

In the end, great chicken isn't about adding extra steps—it's about skipping the unnecessary ones. Leave the sink out of the process, keep the chicken dry, trust your thermometer and let the heat do what it's designed to do. Your kitchen will stay cleaner, your chicken will stay juicier and that beautifully browned crust will finally have a chance to shine.

Nicole 'Snooki' Polizziis giving fans an emotional and unfiltered look at one of the most difficult chapters of her life.

On July 31, the Jersey Shore star shared an Instagram video documenting her recent hysterectomy after being diagnosed with Stage 1 cervical cancer earlier this year, hoping her experience will encourage other women to prioritize their health.

"It's a scary thing, and a lot of us women deal with it, and no one really talks about it," Polizzi, 38, said in the video. "So I'm here to give that platform for all of us ladies."

The former Jersey Shore star explained that after doctors determined abnormal Pap smear results, they took a cone biopsy, which revealed adenocarcinoma, a type of cervical cancer. During surgery, Polizzi said doctors made a "C-section cut" to remove her uterus, cervix, fallopian tubes, and additional surrounding tissue in her vagina to help ensure all of the cancer was removed. She said doctors left her ovaries in place so that she wouldn't go into early menopause.

While documenting her hospital experience, Polizzi admitted she was "terrified" before the procedure and became emotional while speaking about the recovery process.

"I'm here to show you what's up," she said through tears. "And it's scary, and it's okay to be scared."

The mother of three also shared a heartfelt moment with fans, revealing that both of her parents accompanied her to the hospital.

"You always need your parents. I don't care what age you are," she said. "I need my mom and dad."

Despite the difficult procedure, Polizzi still found moments of humor, joking that the hospital's disposable underwear was "elite."

Now focused on healing, Polizzi said she hopes she'll soon be cancer-free. She also urged women to stay current on Pap smears.
