With the economic conditions in the United States still somewhat troubled, many Americans are choosing to press forward with their lives and many entrepreneurs are taking the chance to get out and open their own business.
Sullivan saw a new business open for the second straight week as RRRibs-N-More, 763 N. Park St., opened for business.
The business is owned by Christy Birge and operated by chefs Gabe Carter and Zach McGraw along with Emily Johnson and Debbie Bolin.
“We were all interested in the restaurant business and really got our start by making ribs,” said Birge. “It wasn’t long before people began raving about the ribs and then Gabe and Zach began selling items from a food cart in September. That just took off and, when the opportunity became available for this building, we went forward with opening at a permanent location.”
The business opened officially on Jan. 2, and reviews have been very strong.
“Our customers have been very pleased with our menu, thus far, and have had very good comments,” said Birge. “We will be holding a grand opening on Jan. 30.”
RRRibs-N-More features a wide variety of menu items that include sandwiches: RRRib sandwich, Philly Steak-n-Cheese, Italian Marinara, Buffalo Chicken, Chicken Philly, Pig Missile; Pita specials from Lisa’s Pita to Chicken or Steak Pitas and Chicago-style hot dogs. Presently, all items can come with a chip and drink combo with other menu items to be added in the future.
“We have been getting a lot of comments on our popular Philly Cheese Steak that comes with onions, peppers, mushrooms and two types of cheese,” said Birge. “Many people ask about the Pig Missile, which is our rib sandwich that is also loaded with peppers, onions and mushrooms.”
Birge stated that the rib sandwiches feature a detailed production in which the rib meat is pulled fresh daily, grilled, marinated, and topped with their own special sauce.
Why did she choose to open in Sullivan?
“We chose Sullivan because we grew up here and wanted to stay in this area and open our business,” said Birge.
